This is the Best Chilli Con Carne Recipe with Baked Beans that your will find. It uses Watties Baked beans instead of Chilli Beans.
This is a recipe we have perfected over many years. It is a very tasty and flavorsome Chilli Con Carne Recipe. However instead of using Chilli Beans which can be expensive, we use of good old Heinz Watties Baked Beans.
You can also substitute the Heinz Watties Baked beans for your favourite brand. However we have found that the Watties sauce has the best taste when combined with the Chili Con Carne.
Ingredients:
- 500 grams of Beef or Pork Mince
- 1 large Onion
- 3 cloves of garlic
- 1 tin of Watties Baked Beans (approx 420gm)
- 2 large Tomatos or 1 tin of Crushed Tomatos in juice.
- 1 tsp Curry Powder
- 1 tsp of Dried Chilli Flakes or Chilli Power
- 2 beef OXO cubes
- 2 teaspoons of Olive Oil
Optional things you can also add
- Fresh Capsicum
- Fresh or dried Mushrooms
- Water to loosen up the mixture
Toppings
- Natural Yogurt
- Lightly Salted Corn Chips (Mexicano Corn Chips)
You can also pad out this meal out by doubling the quantity of Baked Beans, Tomatos, Curry Power and Chilli Flakes. We recommend adjusting the ingredients to experiment with the taste. It is quite a hot Chilli Con Carne, and some people may not like it this hot.
Method:
- Chop up onion and garlic into small pieces.
- Pour olive oil into a large saucepan, and heat it on the hob to a medium heat
- Pour chopped onion and garlic into the saucepan and stir fry until it is soft.
- Put the Beef or Pork mince into the saucepan and stir fry it with the onion until it is brown and cooked through.
- Add the Baked Beans, Tomatos, Curry Powder, Chilli and OXO cubes.
- Add any optional ingredients.
- Bring to the boil on a medium heat, and then leave to simmer for approx 15 minutes so it cooks through.
- As it thickens you may need to add a little hot water to loosen up the mixture and to prevent it catching on the bottom of the sauce pan.
Serve:
Serve the Chilli Con Carne on Rice. Add a large dollop of yogurt on top of the Chilli Con Carne mixture and then sprinkle some Corn Chips on top of this. We prefer the New Zealand Mexicano Corn Chips which are made in New Zealand.
Serve with a side salad or Vegetables.
